FILLING
8 ounces medjool dates, pitted
1 cup boiling water
1 1/4 cups granulated sugar
1/4 cup all-purpose flour
3/4 teaspoon coarse salt
4 large eggs
1 tablespoon finely grated lemon zest, plus 3/4 cup fresh juice (from 4 to 5 lemons)
